Lynne's amazing Aunt Angie (as of 2010 - age 90 and still cooking up a storm!) makes this casserole for family parties and it's always the dish everyone fights over. With each bite, there's delicious shrimp and a crunchy Ritz cracker-based dressing. Incredibly easy to make and perfect for any buffet. Just put the whole casserole dish on the table and let people serve themselves.
Ingredients
- 2 lbs shrimp, peeled & deveined
- 1½ sticks butter
- 1 onion, diced
- 2 rolls Ritz crackers
- salt, pepper & garlic salt to taste
How-to
- Preheat oven to 425º
- Peel and devein the shrimp
- Dice 12 of the shrimp and set aside. Cut the rest of shrimp into 2 pieces
- Melt the butter in a saucepan over medium heat
- Add onions, crackers, the 12 diced shrimp and seasonings to the melted butter (the "dressing"), and stir until all ingredients are well coated
- Spread half of “the dressing” on the bottom of a 9” x 13” casserole dish
- Layer remaining shrimp across dressing
- Spread remaining dressing on top of the shrimp
- Bake for 20 minutes at 425º, lower oven heat to 350º and bake an additional 15 minutes and serve
