Cocotini

The infusion of spices into this coconut drink make for a festive, fragrant holiday cocktail. Cinnamon sticks, star anise and whole cloves are steeped in boiling water to infuse it with the heavenly smells and flavors of these incredible spices. Add rum and coconut flavors and you have a winner. Garnish with raspberries and nutmeg to make it complete. Warning: these go down very easily and you forget there's rum in them!

About Lynne Viera

Lynne is passionate about food which can be attributed to the fact that she was fortunate enough to grow up with a mother who was an incredible cook, a father who grew a garden that was the envy of the neighborhood and 6 siblings who all love to eat! Lynne is a second-generation American. Her grandparents are all from Portugal and the traditions and food of this country have had a big influence on her and inspired her to learn about other cultures and their food.

Recipe

Ingredients

  • 2 cups water
  • 4-5 whole star anise
  • 10-12 whole cloves
  • 1 cinnamon stick
  • 15 oz can of cream of coconut
  • 14.5 oz can coconut milk
  • 14 oz can condensed milk
  • 2 - 2 1/2 cups of white rum (to taste)
  • raspberries and freshly grated nutmeg for garnish

How-to

  1. Put water, star anise, cloves and cinnamon in a sauce pan on the stove
  2. Bring to a boil and strain. Let cool
  3. Mix strained liquid with cream of coconut, coconut milk, condensed milk and rum
  4. Refrigerate for 1 hour
  5. Pour into individual martini glasses and garnish with raspberries (on the rim or in the glass) and freshly grated nutmeg
