About Lynne Viera

Lynne is passionate about food which can be attributed to the fact that she was fortunate enough to grow up with a mother who was an incredible cook, a father who grew a garden that was the envy of the neighborhood and 6 siblings who all love to eat! Lynne is a second-generation American. Her grandparents are all from Portugal and the traditions and food of this country have had a big influence on her and inspired her to learn about other cultures and their food.

Recipe

Ingredients

  • canola oil to coat the bottom of the pot
  • 1 chopped onion
  • 1 tsp salt
  • 2 tbsp garlic
  • 2 tbsp grated ginger
  • 1 1/2 cups lentils, washed and drained
  • 5 cups chicken stock or broth
  • 1/4 tsp freshly ground pepper

How-to

  1. Melt oil over medium-high heat in a large stockpot or Dutch oven (it's important to use a pan with a heavy bottom because your onions will stick to the pan otherwise)
  2. Add the onions and salt and sauté the onions until deep brown, about 10 minutes
  3. Reduce heat to low and add garlic, ginger. Cook until aromas are released, stirring constantly, about 1 minute
  4. Add lentils and cook an additional minute, constantly stirring so the lentils are evenly cooked
  5. Add chicken stock, bring to a boil
  6. Add pepper, reduce to a simmer, and cook, uncovered, about 1/2 hour. Stir soup regularly to ensure even cooking so the lentils do not burn. When done, lentils should be soft inside but not chalky tasting
  7. Serve immediately or keep in the fridge and warm up for on a cold night. Great accompanied with a nice thick piece of Italian or French bread

    I'm kind of lazy and prefer others to cook for me but I'm going to make this lentil soup. It looks too good not to be able to make it for myself whenever I get the craving. Thanks, Lynne! (Jun 30, 2008 6:34:12 AM)
