About Tom Schlesinger-Guidelli

Tom, Bar Manager at Craigie on Main,  is a young but tremendously experienced and innovative master of the bar. Not only does he love to create amazing drinks, but he also loves to tinker in the kitchen to make his own bitters, ginger beers and more. He started young, working at his uncle Chris Schlesinger's restaurant, the Back Eddy. He received his most intense training from the talented mixologists at Eastern Standard in Boston where he got quite a few cocktail hours under his belt. Recipe

Ingredients

Recommended Cocktail Glass:  Highball

For the Ginger Beer

  • 3" piece fresh ginger (or a couple of knobs; enough when juiced to yield 1 oz ginger juice)
  • 2 oz simple syrup (equal parts sugar and water)
  • 2½ oz fresh lemon juice, finely strained
  • 2-3 dashes Angostura bitters
  • 8 oz cold water
  • single charge of CO2

For the Brock & Stormy Cocktail

  • 1½ oz spiced rum (Sailor Jerry)
  • ¾ oz Benedictine liqueur
  • ¾ oz fresh lemon juice
  • 2-3 dashes Angostura or Bittermens Tiki Bitters*

Special Equipment

  • juicer
  • ½-1 liter soda siphon, chilled
  • CO2 canister

*Bittermens Tiki Bitters is not yet commercially available as of February 2009

How-to

Make the Ginger Beer

  1. Peel about a 3" piece of fresh ginger.  Run through a juicer to make fresh ginger juice.  You will need approximately 1 oz of ginger juice
  2. Add 2 oz simple syrup, 2½ oz fresh lemon juice (finely strained), 2-3 dashes Angostura bitters, and 8 oz cold water
  3. Pour mixture into a chilled soda siphon and screw top on tightly
  4. Use a single charge from a CO2 canister; you can hear the gas get inserted into the canister. Then discard the charge and refrigerate the Ginger Beer for about 1 hour

Make the Brock & Stormy

  1. While holding the soda siphon level, fill a glass halfway with the chilled Ginger Beer
  2. Add 1½ oz spiced rum (Sailor Jerry), ¾ oz Benedictine liqueur, ¾ oz fresh lemon juice, and 2-3 dashes Angostura or Bittermens Tiki Bitters
  3. Fill with ice, give it a roll, add a tall straw and serve
