About Tom Schlesinger-Guidelli

Tom, Bar Manager at Craigie on Main,  is a young but tremendously experienced and innovative master of the bar. Not only does he love to create amazing drinks, but he also loves to tinker in the kitchen to make his own bitters, ginger beers and more. He started young, working at his uncle Chris Schlesinger's restaurant, the Back Eddy. He received his most intense training from the talented mixologists at Eastern Standard in Boston where he got quite a few cocktail hours under his belt. Recipe

Ingredients

Recommended Glass:  Champagne Flute

  • sparkling wine
  • absinthe (Herbsaint) soaked sugar cube
  • 3/4 oz Calvados
  • lemon swath

How-to

  1. Place a sugar cube in a glass and add a splash of absinthe
  2. Fill a flute glass with sparkling wine
  3. Add the absinthe-soaked sugar cube
  4. Float ¾ oz Calvados
  5. Finish with a lemon swath
