Shrimp Scampi

Some believe that you should not mix seafood and cheese. We're here to tell you it works! A generous Parmesan coating forms a delicious crust for basil and oregano infused shrimp. Pop it in the oven for 5 minutes and then under the broiler for another 5, and dinner is ready.

About Brian Fairben

Brian's culinary exposure began as a New York City waiter – an experience which taught him many of life’s great lessons. After moving to Portland, OR, he longed for an authentic NY-style pizza to stay connected to his roots. He found it on SE 48th and Hawthorne, where the crispy crust, secret cheese blend, and fresh basil keeps him waiting up to an hour for the privilege to be seated - oh how he wishes he had VIP status. Brian loves to cook his special seafood extravaganzas for his wife and friends and is a dad to one cute little bundle of joy named Cecelia.

Recipe

Ingredients

Serves 4 entrees, 8 appetizers

  • 1 lb shrimp, deveined and shelled (keep tails on)
  • 1 stick butter
  • ¼ cup olive oil
  • 4½ tbsp fresh parsley
  • ½ cup fresh basil
  • 2 tbsp fresh oregano
  • 2 tbsp fresh garlic
  • 2 tbsp fresh lemon juice
  • ½ tsp salt
  • Italian Parmesan bread crumbs

How-to

  1. Preheat oven to 450º
  2. Spread shrimp out on a cookie sheet.
  3. Melt butter in a small saucepan
  4. In a food processor, combine olive oil, parsley, basil, oregano, garlic, lemon juice and salt and pulse until mixture comes together
  5. Pour mixture over butter and mix well. Then pour butter mixture over shrimp
  6. Sprinkle bread crumbs liberally over the shrimp
  7. Bake at 450º for 5 minutes, then broil for 5 more minutes. Keep an eye on the shrimp to ensure it doesn't overcook

    Awesome! Didn't have Parmesan bread crumbs, so mixed reg crumbs with shredded Parmesan. Delicious! Next time will add some heavy cream with the angel hair/ Scampi sauce mixture. Will cook again! (Feb 14, 2010 8:04:28 PM)
