Shrimp Scampi

Serves 4 as an entree; 8 as an appetizer


  • 1 lb shrimp, deveined and shelled (keep tails on)
  • 1 stick butter
  • ¼ cup olive oil
  • 4½ tbsp fresh parsley
  • ½ cup fresh basil
  • 2 tbsp fresh oregano
  • 2 tbsp fresh garlic
  • 2 tbsp fresh lemon juice
  • ½ tsp salt
  • Italian Parmesan bread crumbs


  1. Preheat oven to 450º
  2. Spread shrimp out on a cookie sheet.
  3. Melt butter in a small saucepan
  4. In a food processor, combine olive oil, parsley, basil, oregano, garlic, lemon juice and salt and pulse until mixture comes together
  5. Pour mixture over butter and mix well. Then pour butter mixture over shrimp
  6. Sprinkle bread crumbs liberally over the shrimp
  7. Bake for 5 minutes, then broil for 5 more minutes. Keep an eye on the shrimp to ensure it doesn't overcook
