Classic Giblet Stuffing

Bea's stuffing is something to fight over. Just ask her 7 children. This recipe was handed down from Bea's mother, an amazing woman who also had a large family to feed. This stuffing is fantastic right out of the bird or great in a sandwich the next day (or even the same day!). An outstanding family favorite, Bea's stuffing brings out the absolute worst in her children as they try to hoard as much as they can before it even reaches the table. Some kids never grow up when it comes to really good food.

About Bea Viera

Bea is the mother of 7 children. Can't think of a better test kitchen than hers. She has perfected many delicious recipes, some of which she has been kind enough to share with how2heroes. Bea is also somewhat of a prodigy. She paints and plays the piano and guitar beautifully, having had little-to-no training. She is a true Renaissance woman and an inspiration to us all.

Recipe

Ingredients

  • turkey or chicken giblets
  • 8 cps bread cubes from Portuguese or Italian bread, crust on
  • 2 cups water
  • 1 onion, sliced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp sage
  • 1/2 tsp allspice
  • 1/2 tsp poultry seasoning
  • 4 tbsp butter
  • water if necessary to add moisture

 

How-to

  1. Boil giblets in 2 cups of water for 5 minutes
  2. Remove heart and liver and finely chop.  Reserve liquid
  3. Saute onions in melted butter until soft
  4. Add bread cubes and saved giblet water (remove other giblets) add spices and stir until cubes are soft
  5. If necessary, add water for moisture
  6. Stuff chicken or turkey just before roasting

    There's one way to keep your children from fighting over this stuffing - make more!. This stuffing is fantastic in a turkey sandwich with cranberry sauce in a Portuguese roll. Obrigado! (Oct 31, 2008 11:00:57 PM)
