Fun, funky, EASY. Alina Eisenhauer shows a molecular-inspired technique to turning any fat-based substance into edible dirt! In this demo, she starts with melted dark chocolate and pulses it in a food processor with tapioca maltodextrin (a modified food starch). The science behind this crazy ingredient is that it stablizes fatty substances, drying them out and turning them into powder. The best part is — as soon as you spoon this "dirt" into your mouth, it melts back into its original form — smooth, creamy chocolate (with NO trace of the tapioca maltodextrin)!
Alina Eisenhauer, winner on Food Network's "Sweet Genius," is the executive pastry chef and owner of Sweet, a pastry and specialty cake shop and dessert bar in Worcester, MA. Her fascination with food began at an early age while living in the Berkshires. Alina's combination of talent, guts and confidence led to her first pasty job at age16!
