About Alina Eisenhauer

Alina Eisenhauer is the executive pastry chef and owner of Sweet, a retail pastry and specialty cake shop and dessert bar in Worcester, MA. Her fascination with food began at an early age while living in the Berkshires. Alina's combination of talent, guts and confidence led to her first pasty job at age16! Even a diversion into education and employment in exercise physiology could not keep Alina from her true calling. Food is her passion and her life which is very lucky for pastry lovers.

Recipe

Ingredients

Makes 1 Serving

  • 1 banana, quartered
  • 4 medium-size spring roll wrappers
  • oil for deep frying
  • 2 tbsp granulated sugar
  • ½ cup caramel sauce (or sundae sauce)
  • 1 tbsp rum (optional)

How-to

Prepare & Fry Banana

  1. Heat oil to 365º in deep fryer or skillet
  2. Slice banana into quarters and wrap each quarter in a spring roll wrapper, folding edges of the wrapper in, rolling it up, and placing flap side on the bottom
  3. Place wrapped bananas, flap side down, into heated oil and fry for about 1 minute, until crispy
  4. Remove from heat and place in a paper bag containing granulated sugar and give the bag a shake to coat fried bananas with sugar

Make Caramel Sauce

  1. Heat ½ cup of caramel sauce until bubbling
  2. Add rum and heat just to warm through (mixture will bubble up and get foamy). Mixture will be extremely hot

Assemble

  • Plate the bananas and either serve the caramel sauce on the side or drizze on top.  Enjoy!
