Cobblers are a rustic dessert with lots of fruit. Bea's got her Peach Cobbler perfected. A great biscuit top bakes to a golden brown and the peaches are warm and juicy. Top it off with a hefty dollop of ice cream. Life is good.

Peach Cobbler

Cobblers are a rustic dessert with lots of fruit. Bea's got her Peach Cobbler perfected. A great biscuit top bakes to a golden brown and the peaches are warm and juicy. Top it off with a hefty dollop of ice cream. Life is good.

About Bea Viera

Bea is the mother of 7 children. Can't think of a better test kitchen than hers. She has perfected many delicious recipes, some of which she has been kind enough to share with how2heroes. Bea is also somewhat of a prodigy. She paints and plays the piano and guitar beautifully, having had little-to-no training. She is a true Renaissance woman and an inspiration to us all.

Recipe

Ingredients

Filling

  • ½ cup sugar
  • ½ tsp cinnamon
  • 1 tbsp cornstarch
  • 4 cups fresh peaches, peeled & sliced
  • 1 tsp lemon juice

Topping

  • 1 cup all-purpose flour
  • 3 tbsp shortening
  • 1½ tsp baking powder
  • ½ cup milk
  • ¼  tsp salt
  • 1 tbsp sugar
  • vanilla ice cream (optional but highly recommended)

How-to

Make Filling

  1. Blend ½ cup sugar, cornstarch and cinnamon in a saucepan
  2. Stir in peaches and lemon juice
  3. Cook on medium heat, stirring constantly until mixture thickens and boils which will take about 3 minutes. Continue to stir for 1 minute. Set aside

Make Topping & Assemble

  1. Preheat oven to 400º
  2. Stir flour, 1 tbsp sugar, baking powder and salt in a bowl
  3. Add shortening and milk. Mix with a fork until dough comes together
  4. Pour peaches into 2 qt casserole. Drop dough onto fruit by spoonfuls
  5. Bake 30 minutes at 400º until topping is golden
  6. Serve warm with scoop of vanilla ice cream

    I wish you could all have the opportunity to get Bea to make this for you. She's happy to make whatever dessert you might want. She'll have one dessert in the refrigerator, one hiding in the microwave, one on the counter. Plenty for everybody. But she's MY mother, so unfortunately you'll have to either make this for yourself or get your own mom to do it. It's so-o-o good. (Sep 22, 2009 10:15:28 AM)
