We all know Bea's cooking holds a warm spot in her children's hearts. But there's something about her soups and chowders that warms them even more. Quahogs are the stars of this chowder and the creamy and chunky textures in every spoonful are heaven. Bea has the culinary Midas touch, that's for sure!

Bea's Clam Chowder

We all know Bea's cooking holds a warm spot in her children's hearts. But there's something about her soups and chowders that warms them even more. Quahogs are the stars of this chowder and the creamy and chunky textures in every spoonful are heaven. Bea has the culinary Midas touch, that's for sure!

About Bea Viera

Bea is the mother of 7 children. Can't think of a better test kitchen than hers. She has perfected many delicious recipes, some of which she has been kind enough to share with how2heroes. Bea is also somewhat of a prodigy. She paints and plays the piano and guitar beautifully, having had little-to-no training. She is a true Renaissance woman and an inspiration to us all.

Recipe

Ingredients

  • 20 quahogs
  • 32 oz quahog juice
  • 1 medium onion, chopped
  • ½ pint heavy cream
  • 2 ribs celery, chopped
  • 4 oz butter
  • 3 large red potatoes, chopped
  • 4 oz flour
  • 1 bay leaf
  • ½ tsp white pepper
  • ¼ tsp thyme
  • 2 cloves garlic, chopped

How-to

  1. Boil chopped potatoes for 20 minutes. Set aside
  2. Wash quahogs if necessary. Place in large pot, cover with water and steam until quahogs open. Remove quahogs from pot and chop. Reserve juice, strain
  3. In a gallon pot, add 4 oz butter and garlic and saute 2-3 minutes. Add onions, celery and spices. Saute until onions are translucent
  4. Add flour to make a roux, stirring constantly. Cook over LOW heat for 5 minutes (don't brown). Slowly add quahog juice, stirring constantly to avoid lumps. Simmer 10 minutes
  5. Add pre-cooked potatoes, cream and quahogs and bring to a boil. Season to taste

    Bea can make just about anything! Loved watching her make Clam Chowder. Her Portuguese Kale soup is a winner too. She knows all of the tricks of the trade. (Sep 1, 2009 6:43:19 PM)
