Squash Pie

Bea's secret for how to get a vegetable into her children? She fooled them with this delicious squash pie. It's a family favorite and needs no garnish although a dollop of whipped cream and some pumpkin ice cream have been known to make their way to the plate.

About Bea Viera

Bea is the mother of 7 children. Can't think of a better test kitchen than hers. She has perfected many delicious recipes, some of which she has been kind enough to share with how2heroes. Bea is also somewhat of a prodigy. She paints and plays the piano and guitar beautifully, having had little-to-no training. She is a true Renaissance woman and an inspiration to us all.

Recipe

Ingredients

  • 6 tbsp sugar
  • 1/2 tsp salt
  • 1 tsp ginger
  • 1-1/2 cups milk
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1 15-oz can squash
  • 2 eggs

How-to

  1. Preheat oven to 425º
  2. Beat eggs and milk slightly with a whisk
  3. Add all other ingredients and mix thoroughly
  4. Pour into unbaked pie crust and bake at 425º  for 20 minutes
  5. Reduce oven temperature to 375º and bake an additional 50 minutes
  6. Test with round-edged knife at the edge of the pie. If the knife comes out clean, the pie is done
  7. Allow to cool slightly before serving
