Squash Pie

Ingredients

  • 6 tbsp sugar
  • ½ tsp salt
  • 1 tsp ginger
  • 1½ cups milk
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1 15-oz can squash
  • 2 eggs
  • pre-made pie crust, unbaked

How-to

  1. Preheat oven to 425º
  2. Mix squash, ginger, nutmeg, cinnamon, salt and sugar in a bowl
  3. In separate bowl slightly beat the eggs then mix in milk
  4. Add milk and eggs to squash mixture and combine
  5. Pour into unbaked pie crust and bake for 20 minutes
  6. Reduce oven temperature to 375º and bake an additional 50 minutes
  7. Test with round-edged knife at the edge of the pie. If the knife comes out clean, the pie is done
  8. Allow to cool slightly before serving
