Mary Reilly, chef/owner of Enzo Restaurant & Bar assembles a flavorful salad of eggplant, onion, mint and feta with a honey-lemon dressing using her own home-grown honey! (Watch Mary's Beekeeping 101 video). She then broils her eggplant, but if you want a smokier nuance, toss the slices on the grill. This salad is best served at room temperature, and is great for a picnic basket.
