Mary Reilly, amateur beekeeper and chef/owner of Enzo Restaurant & Bar finds an excellent application for her home-harvested honey. Her caramel recipe contains honey, sugar, butter and cream. You can also add toasted nuts to the mix. These candies yield a soft and chewy texture that Mary finishes with a sprinkle of sea salt for delicious contrast and crunch.
