About Katie Hickey

Katie Hickey is a demonstration chef at Canyon Ranch health resort in Lenox, MA. A Pittsfield, MA, native, Katie grew up in a "cooking family." After atternding The Art Institute of Colorado, she found her way back to Massachusetts where she teaches the tips and tricks for creating healthy cuisine on the beautiful grounds of Canyon Ranch.

Recipe

Ingredients

Makes 1 Serving

  • 1 lime wedge
  • 1 cup fresh seedless watermelon, cut into 1" cubes
  • ¼ cup sparkling pear or apple cider
  • pinch of cilantro + sprig for garnish
  • 1 cup ice cubes

Special Equipment

  • cocktail shaker

How-to

  1. Whirl the watermelon cubes in a blender to make ½ cup watermelon juice
  2. Add the watermelon to a cocktail shaker with ice. Squeeze lime into the shaker. Add the squeezed lime wedge, pear juice and cilantro
  3. Shake and strain the mixture into an 8 oz martini glass
  4. Garnish with a sprig of cilantro

    Delicious! Pear juice is - who knew? I didn't have ice cubes, so I used frozen blueberries and then left them in. I also put in some chunks of watermelon and a squeeze of blueberry honey. Thanks, Canyon Ranch. I'll be making this a lot. (Jul 5, 2009 6:03:05 PM)
