About Augusto Lino

"Lino," as his friends and loyal customers call him, is originally from Brazil and came to New York City several years ago before settling in the Boston area as bar manager at UpStairs on the Square. Bringing back the classics and adding a twist to them as well is Lino's style. He does a great job of showing us how to make quality drinks the correct way and sharing some cocktail lore while he's at it. And look how snazzy he looks in his jacket and tie!

Recipe

Ingredients

  • 3/4 oz black strap rum (suggestion: Cruzan - an aged rum blended with molasses)
  • 3/4 oz spiced rum (suggestions: Sailor Jerry - 92 proof, or Captain Morgan)
  • 1/2 oz simple syrup (3 parts sugar to 1 part water - recommend using raw or unprocessed sugar) or you can use honey
  • 3 oz hot water (option: can use hot cider instead)
  • 3 tbsp unsalted butter
  • pinch of ground Sichuan pepper

How-to

  1. Start with a heated mug
  2. Add 3/4 oz black strap rum, 3/4 oz spiced rum and 1/2 oz simple syrup
  3. Add 3 oz hot water and stir to mix
  4. Drop in butter as one big slab.  Don't mix in the butter.  It will dissolve as you drink the cocktail
  5. Top with ground Sichuan pepper
