What better time to roast potatoes than when you've got something cooking on a grill or in your smoker? Mark Patuto shares his tips for foil-wrapping your spuds and tossing them on the fire. Doesn't get any easier. They'll pick up the smoky-scented goodness from whatever you've got cooking. And clean-up? None!
Ingredients
Special Equipment
- heavy-duty aluminum foil
- long barbecue fork to test for doneness
- fireproof oven mitt
How-to
- Scrub potatoes clean, leaving skins on
- Double-wrap with foil, making sure the outer layer of foil has the dull side in/reflective side out
- Carefully place on coals and roast for 30-40 minutes. Check with a long barbecue fork for doneness (fork should go into potato easily when done)
