International » Tomatillo-Avocado Salsa
A smooth salsa that Amanda Escamilla and her family enjoy often with corn tortilla chips, it's also one of her favorite salsas to have with tamales. Creamy avocado, 2 whole jalapeños!, sweet and tangy onions, fresh lime juice and vibrant cilantro are flavors that complement the spices and masa of tamales. Buen Provecho!
Ingredients
- 6 medium sized tomatillos
- 2 green jalapeños
- handful of cilantro, stems removed
- juice of 1 lime
- 1 small Spanish onion, chopped
- pinch of salt
- pinch of pepper
- 1 ripe avocado
Special Equipment
- citrus juicer
- blender
How-to
- Peel and discard husks from the tomatillos
- Place tomatillos and jalapeños in a saucepan, add enough water to cover. Bring to a boil, then remove from heat and let steep until ingredients are soft, about 30 minutes
- Reserve the flavored water from the pot and set aside
- Place softened ingredients in a blender
- To the blender add cilantro, lime juice, onions, salt and pepper
- Blend until liquefied, adding reserved cooking water to aid in the blending process
- Scoop out meat from avocado and add to the blender at the end. Mix until all ingredients are puréed
