Turkey Salad
- 2½ lbs cooked turkey, diced
- 1 bunch scallions, diced
- 2 ribs celery, diced small
- 1 cup toasted pecans
- 1 cup mayonnaise
- ⅔ cup cranberry sauce (See Ingredients & Instructions Below)
- dried cranberries (optional for garnish)
- kosher salt & freshly ground black pepper to taste
Cranberry, Pear & Apricot Sauce with Candied Ginger
Makes 2 pints (so you'll have extra for dinner sides, etc.)
- 1 lb bag of fresh cranberries
- 1½ cups of granulated sugar
- ¾ cup apple juice
- ¾ cup sliced dried apricots
- 2 fresh pears, peeled and diced
- ⅔ cup sliced candied ginger
- 1 tbsp Grand Marnier
