Greek Tzatziki

Tzatziki is so wonderfully light and fresh-tasting. The cucumber and Greek yogurt flavors work well together. This is a nice, healthy snack to have simply with pita and tomatoes or as a side to a meat or lamb dish.

Recipe

Ingredients

  • 2 English cucumbers (English cucumbers have much less moisture than regular cucumbers)
  • 1/4 tsp ground black pepper
  • 1/2 tsp salt
  • 1 clove finely chopped garlic
  • 1-1/2 tbsp extra virgin olive oil
  • juice of 1 lemon
  • 1 pint Greek yogurt (Greek yogurt is strained and much better in this recipe)

How-to

Prepare Cucumbers

  1. Peel cucumbers
  2. Cut cucumbers in half and then quarter them (easiest way to remove the seeds)
  3. Remove seeds by running a knife along the bottom of the seeds
  4. Grate cucumbers in food processor with the shredding blade attached (a hand grater will work too)
  5. Put cucumbers in a kitchen towel and squeeze the moisture out (squeeze 7-8 times as tight as possible) over bowl

Combine Ingredients

  1. Empty strained cucumber into a bowl and add the salt & pepper, finely chopped garlic, lemon juice and olive oil
  2. Mix well
  3. Add yogurt into the mixture

Create a Tasty, Beautiful Plate

  1. Toast pita bread in a pan with olive oil. Brown on both sides
  2. Add Tzatziki to the plate
  3. Chop tomatoes and add next to the Tzatziki
  4. Drizzle olive oil, salt, pepper and Greek oregano over the tomatoes
  5. Slice the toasted pita bread into triangles and add to the plate
