Sausage, Bacon & Apricot Kebabs

Let's face it, the best thing about grilling is no muss, no fuss, no dishes, no clean-up. Fire up these tasty kebabs, grab a beer, sit back and smell the roses. Or the charcoal. Or the mesquite.  Whatever enhances the BBQ experience for you will work. Just don't forget to use tongs!

About Jason Bacon

With a name like Bacon it only seemed right that Jason combined his 10+ years of television production experience with food. Working for two years as the lead videographer/editor of TV DINER on New England Cable News, Jason was introduced to the wonderful food and dining scene in New England. Now as the Director of Photography with how2heroes he works with home cooks and chefs to make the best instructional cooking videos found on the web!  While not too fond of the kitchen, once the weather breaks it's hard to keep him off the grill.  Jason lives in Southeastern Massachusetts with wife and fellow how2hero Sarah, and daughter and future how2hero Lily.

Recipe

Ingredients

Serves 6

  • 1 pkg (6 links) Italian pork sausage
  • 1 cup dried apricot halves
  • 6 slices thick-slab bacon

For the Sauce

  • 3 tbsp apricot preserves
  • 3 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce

Special Equipment

  • skewers (if using wooden skewers, soak in water 30-60 minutes prior to using)
  • tongs!!!

How-to

Prepare Sauce

  1. Combine preserves, lemon juice, mustard and Worcestershire sauce in a small bowl and set aside

Prepare Kebabs

  1. Precook sausage for 10 minutes in gently boiling water.  Drain and cut into ¼" slices
  2. Alternate sausage and apricots on 6 skewers, weaving bacon back and forth like ribbon between them
  3. Grill over medium-high heat for 3-4 minutes per side, basting with sauce mixture frequently until bacon is cooked through
