Southern Biscuits

We suppose biscuits are considered a side dish but we could make a meal out of these. You will never forget Chef Ashbell's techniques, in particular to fold the dough 3 times ONLY, once you hear him say so. Who are we to argue with perfection?

About Southern Biscuits

We suppose biscuits are considered a side dish but we could make a meal out of these. You will never forget Chef Ashbell's techniques, in particular to fold the dough 3 times ONLY, once you hear him say so. Who are we to argue with perfection?

About Ashbell McElveen

Born and raised in South Carolina, Chef Ashbell has traveled and cooked around the world and now resides in New Orleans. He brings his Southern regional cooking background together with his world experience to create phenomenal cuisine. Chef Ashbell is big in England due to his appearances on the BBC. Now you can see him cook up a storm here, no matter where you live!

Recipe

Ingredients

Chef Ashbell says Biscuits are easy and fast to make!

  • 2 cups all-purpose flour
  • 1½ sticks cold butter
  • 3 tsp baking powder
  • ½ tsp salt
  • 1 tsp sugar
  • ¼ cup or more cold milk

How-to

  1. Preheat oven to 425 degrees
  2. Sift flour, sugar and salt together in a bowl
  3. Cut cold butter into small pieces and add to the flour mixture, and mix quickly with your hands or with a pastry cutter.  You want a coarse consistency, with little bits of butter throughout
  4. Add milk a little at a time until you can form dough.  If the dough is too sticky, add a bit of flour
  5. Once you have a dough, place on a floured board and knead 3 times ONLY!
  6. Then roll dough out to a thickness of ½" and cut into rounds for biscuits or use as a crust for your favorite cobbler
  7. Place cut biscuits on an ungreased sheet pan and bake in preheated 425 degree oven for 10-14 minutes and serve immediately

Chef Ashbell’s’ Tip: Biscuits are quick breads meant to be made and eaten in 20 minutes, so Don’t overwork the dough as in making bread
