Testing the Grill Heat

A foolproof way to test grill heat. Chris Schlesinger shows us how it's done. Just hold your hand about 4" off the grill and see how long you can keep it there. If you can count to 3 Mississippi, you've got a pretty hot fire, 4-5 is medium, 5-7 is low. Works every time.

About Chris Schlesinger

Chris is the owner of the legendary East Coast Grill in Cambridge, MA, known for fresh seafood, amazing barbecue and  "Hell Night," an evening of seriously hot food that is held several times throughout the year which includes a Wimp Menu for those who can't hack it. Chris was born and raised in Virginia, where he first developed his love for barbecue, spicy food and live fire cookery. He won the 1996 James Beard Awards' Best Chef of the Northeast.
