Michael Bissanti started, as so many chefs/restaurant owners/food proprietors do, washing dishes. A determination to not go into the restaurant business led to, as often happens to those passionate about food, going into the restaurant business. Starting with the The 21st Amendment and The Paramount Restaurants in Boston, Michael is now offering amazing burgers and sides as owner/founder of FOUR burgers in Central Square, Cambridge,

 

Recipe

Ingredients

yield 12 burgers, about 4½ oz each

Burgers

  • 4 lbs ground turkey
  • 2 Granny Smith apples, peeled & diced small
  • 3 tbsp fresh lemon juice (or more depending on your taste)
  • ½ bunch parsley, finely chopped
  • olive oil
  • salt & pepper to taste
  • whole wheat burger buns, slightly toasted

Cranberry Chutney

  • 2¼ lbs cranberries (fresh or frozen)
  • 1¾ lbs Granny Smith apples (diced to same size as a cranberry)
  • 1¼ cup apple cider vinegar
  • 2 cups light brown sugar
  • ½ tsp cinnamon
  • ½ tsp kosher salt
  • ½ tsp ground ginger
  • ¾ tsp red pepper flakes
  • ½ lb raisins

Tarragon Mayo

  • 1 cup mayonnaise
  • 1 tbsp fresh tarragon, chopped
  • 1 tsp lemon juice
  • salt & pepper to taste

How-to

Prepare Burgers

  1. Combine apples with lemon juice, parsley, salt and pepper and mix well
  2. Add turkey and blend together until all the ingredients are combined evenly
  3. Form into 4 or 4½ oz burgers about ¼" to ½" thick
  4. In a non-stick pan heat olive oil over medium heat
  5. Add burgers and sear on one side until juice begins to rise up through the burger and the outside edges begin to cook and whiten, about 4 minutes
  6. Flip the burger and press down slightly. This will even out the burgers, seal in the juice and prevent them from "puffing up."  Continue to cook until the juice runs clear, about 4 minutes.  Do not overcook as that will dry out your burger

Make Chutney

  1. Combine all ingredients and simmer for 30 minutes
  2. Serve chilled or warm

Make Tarragon Mayo

  1. Combine all ingredients and mix well
