About Ronie Bicalho

Ronie Bicalho is Head Chef at Miracle of Science Bar & Grill in Cambridge, MA. A native Brazilian, he's been cooking up innovative breakfast, lunch and dinner dishes at what locals call "the Miracle" for over a decade. Known for his Ronie Burger, voted Boston's Best Burger in 2008, and a face that lights up a room when he smiles, Ronie has been at fixture at the Miracle since 1993.

Recipe

Ingredients

Makes 10 Burgers

  • 5 lbs ground beef
  • 8 oz chopped jalapeno
  • 1 tbsp cayenne pepper
  • 10 slices pepper jack cheese
  • 10 hamburger buns

Condiments

  • lettuce
  • tomato
  • ketchup

Roasted Potatoes

  • 4 potatoes, sliced into bite-sized pieces
  • 1 red onion, sliced
  • olive oil
  • salt

How-to

The Burgers

  1. Form ten ½ lb burger patties
  2. Grill burgers 2-3 minutes per side for medium-rare (Ronie recommends medium-rare for the best burger)
  3. Toast bun at 350º for 5 minutes
  4. Garnish with lettuce, tomato and ketchup

The Roasted Potatoes

Step 1:

  1. Preheat oven to 350º
  2. Slice 4 potatoes into bite-sized pieces and place on cookie sheets
  3. Drizzle olive oil over potatoes and coat them evenly with your hands
  4. Salt the potatoes
  5. Roast for 2 hours at 350º

Step 2:

  1. Coat pan with canola oil
  2. Saute 1 sliced red onion
  3. Add in the roasted potatoes
  4. Serve
