Richard Garcia has been cooking since age 17. His only formal culinary training was preparing dishes for high-ranking officials while in the Marines, in which he served during the War on Terrorism. Richard now focuses on using only the freshest ingredients from local farms at Tastings Wine Bar & Bistro at Patriot Place in Foxboro, MA (home of the New England Patriots). Recipe

Ingredients

Burgers - Makes 2 Epic Burgers!

  • 1 lb ground beef (80%-20%)
  • 1 tbsp sea salt
  • 1 tsp fresh ground black pepper

Red Onion Jam (to be made in advance)

  • 4 large red onions, sliced into julienne strips
  • ¼ cup of sugar
  • ¼ cup balsamic vinegar

Tomato Vinaigrette (to be made in advance)

  • ½ cup tomatoes, chopped
  • 2 tbsp garlic, chopped
  • 2 tbsp shallots, chopped
  • ¼ cup sherry vinegar
  • 1 cup extra virgin olive oil
  • salt & pepper to taste

Additional Ingredients

  • 2 sandwich-size English muffins
  • extra virgin olive oil
  • shredded romaine lettuce
  • 2 tomato slices
  • 4 oz Camembert cheese

How-to

Red Onion Jam - to be made in advance

  1. Heat small amount of oil and add onions until translucent
  2. Add sugar and vinegar and reduce the heat to low, allow to cook for 1 hour until jam-like consistency

Tomato Vinaigrette (to be made in advance)

  1. Heat small amount of oil in pan and cook tomatoes, garlic and shallots about 2 minutes
  2. Add sherry vinegar and cook for approximately 5 minutes
  3. Transfer to blender and slowly drizzle olive oil and season to taste

Prepare & Grill Burgers

  1. Mix all ingredients well, shape into 2 even size patties set aside
  2. Add cheese to melt
  3. Lightly oil English muffins and grill to your liking
  4. Place Red Onion Jam, seasoned tomato, shredded lettuce and Tomato Vinaigrette on bottom half of the English muffin. Add burger and top with other half of the English muffin
