Bubbly Blueberry Pie

This blueberry pie is easy to make yet so delicious. Jess whips through this in no time and shows a very cool technique for pleating the crust. The aroma of blueberries & cinnamon will make your whole house smell wonderful. Add a dollop of whipped cream or ice cream and you'll be in pie heaven.

Recipe

Ingredients

Serves 6-8

  • 5 cups blueberries (fresh or frozen)
  • 1 cup sugar
  • 2 tsp lemon or lime juice
  • 2 tbsp cornstarch
  • 1/4 tsp cinnamon
  • 1-2 tbsp butter, cut into even pieces
  • flour for dusting pie dough

 

How-to

  1. Preheat oven to 400°
  2. In a large bowl, gently toss berries with sugar, cinnamon and cornstarch
  3. Sprinkle lemon (or lime) juice over the mixture
  4. Mix thoroughly but gently so as not to crush the berries
  5. Sprinkle flour on a work surface and roll out dough to just over 8" to form the bottom crust.  Gently tuck dough into an 8" pie pan
  6. Spoon berry mixture into bottom crust
  7. Dot with butter evenly over pie filling
  8. Roll out top crust and place over the filling.  Pinch crust together at edges.  Not too thin or crust will burn
  9. Cut plenty of 1/4" vents in the top crust
  10. Bake for 20-25 minutes, until crust is golden brown

Tip: Filling can also be used in tarts or mini pies
