Bubbly Blueberry Pie
Serves 6-8
Ingredients
- 5 cups blueberries (fresh or frozen)
 - 1 cup sugar
 - 2 tsp lemon or lime juice
 - 2 tbsp cornstarch
 - ¼ tsp cinnamon
 - 1-2 tbsp butter, cut into even pieces
 - flour for dusting pie dough
 
How-to
- Preheat oven to 400°
 - In a large bowl, gently toss berries with sugar, cinnamon and cornstarch
 - Sprinkle lemon (or lime) juice over the mixture
 - Mix thoroughly but gently so as not to crush the berries
 - Sprinkle flour on a work surface and roll out dough to just over 8" to form the bottom crust. Gently tuck dough into an 8" pie pan
 - Spoon berry mixture into bottom crust
 - Dot with butter evenly over pie filling
 - Roll out top crust and place over the filling. Pinch crust together at edges. Not too thin or crust will burn
 - Cut plenty of 1/4" vents in the top crust
 - Bake for 20-25 minutes, until crust is golden brown
 
Tip: Filling can also be used in tarts or mini pies
