Recipe

Ingredients

Serves 4 people (you can scale this recipe up for as many people as you like)
Recommended portions: 1-2 per person


NOTE: Great party planning tip. You can assemble the stuffed dates 4-5 days ahead.

  • 10 dates, pitted
  • 10 Marcona almonds (can substitute roasted & salted almonds)
  • ½ lb bacon (preferably smoked applewood)
  • 1/4 - ½ cup honey
  • juice of ½ lemon
  • 1 tsp paprika
  • olive oil to coat pan

How-to

  1. Slice open the dates on one side and remove the pits
  2. Insert an almond into each date
  3. Wrap each date in bacon
  4. Coat saute pan with olive oil and cook dates on the stove over medium heat until browned on both sides
  5. Remove from heat and set aside
  6. In a small saute or sauce pan, combine the honey, paprika and lemon and cook until warmed through
  7. Drizzle over dates and serve

    You really can't go wrong with this amazing appetizer. The sweet dates combined with the salty bacon (I used turkey) and the crunch of the nut it's just heavenly! (Dec 14, 2009 1:30:47 PM)
