Lemon zest and lemon juice shine in a vinaigrette that takes less than 2 minutes to prepare. Fresh chives, a good source of vitamin A, impart a mild onion flavor which makes this not only a flavorful salad dressing but, as Kevin Carey of Verrill Farm tells us, a terrific marinade for fish and chicken. We think it's perfect for basting anything you might want to cook on the grill.

It's here that chef Kevin Carey is able to choose the freshest ingredients for take-home savory entrees, soups and salads. A Bunker Hill Community College Culinary School grad, the student has become the teacher. His Cooking with Kevin series, which provides classes for adults and children, with hands-on experience in the kitchen, is an ongoing popular attraction at the farm.
