About Jason Tremblay

Jason Tremblay, head chef of SoulFire BBQ, is self-taught in the kitchen and knows how to barbecue. Even better for us, he knows how to translate pit-smoked techniques for those of us who don't happen to have a barbecue pit in our kitchen. Jason says, "Barbecue is a different adventure every day," and his easygoing style goes hand-in-hand with the laid-back feel of barbecue.

Recipe

Ingredients

BBQ Sauce & Brine will make enough for about 40 Jumbo Party Wings

Chicken

  • Approx. 40 jumbo chicken wings

Brine

  • ½ gal cold water
  • ½ cup salt
  • ½ cup sugar

BBQ Sauce

  • 2 cups favorite store-bought BBQ sauce
  • 1 cup hot sauce
  • 2 oz honey
  • 2 oz mustard
  • 2 tbsp crushed chili flakes
  • 2 tbsp sriracha hot chili sauce

How-to

Brine Wings

  1. Combine water, salt and sugar and mix well
  2. Wash wings in cold water
  3. Submerge in brine overnight

Make BBQ Sauce

  1. Mix all BBQ Sauce ingredients well and refrigerate one day before use
  2. Remove sauce from refrigerator a few hours before cooking the wings so that sauce is room temperature

Cook Wings

  1. Preheat oven to 400º
  2. Remove wings from brine, place on a sheet pan lined with paper towels and pat dry
  3. Place wings on a separate sheet pan with a lip (not a flat sheet pan with no edge because the grease will run out into the oven)
  4. Lightly season with salt, pepper, and paprika (or use your favorite dry rub)
  5. Put pan in preheated oven for 20 minutes
  6. Flip over all the wings so that they are crispy on both sides and cook for another 20 minutes.  (Ovens vary in cooking time; internal temperature of wings should be at least 170º)
  7. Transfer wings onto a serving pan, pour BBQ sauce onto them and mix so they are evenly coated
