Grill master Andy Husbands of Tremont 647 utilizes a backyard grill to produce "slow heat." This low-and-slow method of grilling is perfect for taking meaty chicken wings to a juicy, golden-brown finish. While the wings cook, Andy takes the flavors of Northern Spain and creates a relish comprised of sherry-soaked dried figs, toasted almonds and other flavorful ingredients. Mound the relish atop the hot-off-the-grill wings and enjoy the fresh, sofisticated flavors of this super simple dish.
Ingredients
For Wings
- 1 lb chicken wings
- kosher salt to taste
- black pepper to taste
For Relish
- ¾ cup dried figs, diced
- ¼ cup sherry
- 1 small red onion, sliced
- ¼ cup diced roasted red peppers
- ¼ cup sliced almonds, toasted
- 1 tbsp sherry vinegar
- 2 tbsp extra virgin olive oil
- 2 tbsp chopped basil
- 2 tbsp chopped parsley
- 1 clove garlic, minced
- zest of 1 lemon
How-to
Prep Grill & Start Wings
- Assure that the grill is clean. Preheat to a “slow heat,” meaning, you should be able to hold your hand above it for 15-20 seconds
- Season wings liberally with salt and pepper
- Place on grill, rotating and flipping every couple of minutes to assure an even, golden-brown finish, and an internal temperature of 165º (this will take 15-20 minutes)
Make Catalan Relish
- Meanwhile, place the dried fruit in the sherry in a mixing bowl and let sit for 15 minutes
- Add the rest of the ingredients and mix well
- Remove wings from grill, top with Catalan relish and serve immediately
