Waiting for succulent meat to slowly cook in your backyard BBQ smoker can be as exciting as watching paint dry. Take this time to assemble a perfect accompaniment to any smoked or grilled meat -- Andy Husbands' relish of lightly-smoked peaches tossed with bourbon, brown sugar, red onions and other goodies. Ingredients
- 2 large, ripe (but firm) peaches, halved & pits removed
- 2 tbsp firmly-packed brown sugar
- 2 tbsp bourbon
- 2 tbsp chopped parsley
- ½ tbsp Dijon mustard
- 1-2 tbsp minced garlic
- ¼ tsp chili flakes
- 2 tbsp cider vinegar
- 1 small red onion, diced
- 1½ tsp cumin seeds, toasted and ground
How-to
- Preheat BBQ smoker to 250º
- Place your peaches, flesh-side-up to smoke for ten minutes
- Remove and let cool to the touch, then slice into ¼" thick slices
- Place the smoked peaches and the rest of the ingredients in a bowl, toss together, season with kosher salt and freshly cracked black pepper to taste
- Serve as a salad or with your favorite roasted or smoked meat such as BBQ Smoked Chicken 101
