About Kids Make Fresh Pasta

Join Jane from Kids Cook! as she makes delicious, fresh pasta with her students, Buster and Alice. This is a pasta primavera dish with nice healthy asparagus and peas, and a very simple sauce made from cooking liquid, butter and a little grated cheese. So easy. So fun.

About Jane Ziegelman

Jane Ziegelman is a fascinating person. She originally studied anthropology, then decided she was interested in food culture. One day she decided she would like to teach kids social studies through food. So now she heads up Kids Cook! in Brooklyn Heights, New York. It's a great program where kids can learn how to cook while learning about different cultures. We wish that school had been around when we were kids!

Recipe

Ingredients

Serves 4-6

  • 2 1/4 cups all purpose flour
  • 3 large eggs
  • 1 cup asparagus, cut into 1" pieces
  • 1 cup peas
  • 4 tbsp butter
  • 1/2 cup cooking liquid
  • salt
  • pepper
  • parmesan cheese

How-to

  1. Pour flour into a mound on cutting board
  2. Using fingers make a well in the middle
  3. Break the eggs into the well and carefully beat them, without disturbing the wall of flour
  4. Use fork to gradually draw the flour into the eggs, stirring in wider and wider circles
  5. Use both hands and push the remaining flour into the center, and work the egg-flour mixture until a dough forms
  6. Knead for 8 minutes or until the dough is springy
  7. Divide into 3 balls, and let the dough rest covered by a damp dish towel for 30 minutes
  8. Sprinkle dough with flour and flatten dough with the palm of your hand
  9. Use a rolling pin and roll dough into a large, flat disc
  10. Use the rolling pin in quick back and forth motions to stretch the disc thinner
  11. Use a pizza wheel to cut the dough into strips for noodles
  12. Add noodles to boiling water
  13. Add asparagus and peas and cook for 4 minutes
  14. Strain
  15. To make sauce add butter and 1/2 cup of remaining cooking liquid
  16. Mix pasta with sauce and season with salt and pepper
  17. Garnish with parmesan cheese

This is really awesome! I love the old-fashion style of making it. I can't wait to try this out at home! (Oct 30, 2008 11:13:42 AM)

hi dianna. the traditional way to make pasta is on a flat surface like buster & alice have done. gives you plenty of room to work the dough. if it's easier for you, however, you can definitely use a bowl. - lynne, how2heroes team (Aug 24, 2008 6:03:47 AM)

Congratulations kids! One question, would using a bowl to mix the pasta be a detriment? (Aug 23, 2008 8:06:23 AM)

I've made my own pasta with a paster maker but Jane makes it look easy without one. Think I'll give a try. Nice job, Buster and Alice! (Jul 26, 2008 10:21:02 AM)
