Kids Make Fresh Pasta

Serves 4-6


  • 2ΒΌ cups all-purpose flour
  • 3 large eggs
  • 1 cup asparagus, cut into 1" pieces
  • 1 cup peas
  • 4 tbsp butter
  • ½ cup cooking liquid
  • salt
  • pepper
  • Parmesan cheese



Prepare Dough

  1. Pour flour into a mound on cutting board
  2. Using fingers make a well in the middle
  3. Break the eggs into the well and carefully beat them, without disturbing the wall of flour
  4. Use fork to gradually draw the flour into the eggs, stirring in wider and wider circles
  5. Use both hands and push the remaining flour into the center, and work the egg-flour mixture until a dough forms
  6. Knead for 8 minutes or until the dough is springy
  7. Divide into 3 balls, and let the dough rest covered by a damp dish towel for 30 minutes
  8. Sprinkle dough with flour and flatten dough with the palm of your hand
  9. Use a rolling pin and roll dough into a large, flat disc
  10. Use the rolling pin in quick back and forth motions to stretch the disc thinner
  11. Use a pizza wheel to cut the dough into strips for noodles

Prepare Pasta 

  1. Add noodles to boiling water
  2. Add asparagus and peas and cook for 4 minute then strain

For Sauce

  1. Add butter and ½ cup of remaining cooking liquid
  2. Mix pasta with sauce and season with salt and pepper
  3. Garnish with parmesan cheese
