Between mourning the death of John F. Kennedy, mimicking Jackie O's iconic style and raising children, the 1960's housewife had a lot on her hands. That's why these little cheesy gems were the perfect party appetizer for her busy schedule. Catherine Walkey of Blue on Highland assembles this classic recipe adapted from cookbook, The Vogue Book of Menus and Recipes (Jessica Daves, 1964). Serve them up with crackers on the side and see your guests enjoy bitefuls between deep discussions over the Cuban Missile Crisis...or Bob Dylan's latest hit...
Ingredients
For Cheese Balls
- 8 oz cream cheese, room temperature
- ½ cup grated Parmesan cheese
- 1½ cups ground almonds or mixed nuts
- hot sauce (to taste)
To Serve
- crackers
How-to
- Grind almonds or mixed nuts in food processor (or, use pre-ground)
- Mix all ingredients together in a bowl until combined and smooth
- Cover and refrigerate, 2-3 hours
- Scoop about 2 tbsp of mixture into your hand and roll into balls, about ½" in diameter. Chill again before serving. Plate with crackers
