A great do-ahead recipe, Jane takes us through this crab & cheese appetizer made on the classic English muffin. You could have these prepared and in the freezer. Just take them out and pop them in the broiler for a quick treat for drop-in guests. We know Jane is always prepared for company and with these delicious crabbies, you can be too .

About Jane Chiarelli

To give you an idea of what a warm, lovely person Jane is, she had freshly baked cookies and coffee made for us when we came to her house to shoot her Meatball video. Jane loves to cook and considers it a pleasure not a chore to cook for her family every day. I hope they realize how lucky they are!

Recipe

Ingredients

  • 1 stick (½ cup) margarine or butter, softened
  • 1½ tsp mayonnaise
  • ½ tsp garlic salt
  • 1 7-oz can crabmeat, well drained
  • 1 5-oz jar Old English Cheese
  • ½ tsp salt
  • 1 pkg (6) English muffins, split in half

Special Equipment

  • mixer
  • wax paper
  • broiler pan

 

How-to

  1. In the bowl of an electric mixer, blend margarine (or butter), mayonnaise, garlic salt, crabmeat, Old English cheese and salt.  Start mixer on low and gradually increase speed until mixture is a creamy spreadable consistency
  2. Place a sheet of wax paper on a cookie sheet
  3. Lay cut halves of English muffins on the wax paper
  4. With a spatula, spread mixture over each muffin half
  5. Lay another piece of wax paper gently over the tops of the muffins and freeze for about 20 minutes
  6. After 20 minutes, remove from freezer, remove wax paper and place muffins on a broiler sheet
  7. Broil for 10-15 minutes until crispy.  Keep an eye on them so they don't burn
  8. Let cool slightly and cut into ¼-inch pieces
