A great do-ahead recipe, Jane takes us through this crab & cheese appetizer made on the classic English muffin. You could have these prepared and in the freezer. Just take them out and pop them in the broiler for a quick treat for drop-in guests. We know Jane is always prepared for company and with these delicious crabbies, you can be too .
Ingredients
- 1 stick (½ cup) margarine or butter, softened
- 1½ tsp mayonnaise
- ½ tsp garlic salt
- 1 7-oz can crabmeat, well drained
- 1 5-oz jar Old English Cheese
- ½ tsp salt
- 1 pkg (6) English muffins, split in half
Special Equipment
- mixer
- wax paper
- broiler pan
How-to
- In the bowl of an electric mixer, blend margarine (or butter), mayonnaise, garlic salt, crabmeat, Old English cheese and salt. Start mixer on low and gradually increase speed until mixture is a creamy spreadable consistency
- Place a sheet of wax paper on a cookie sheet
- Lay cut halves of English muffins on the wax paper
- With a spatula, spread mixture over each muffin half
- Lay another piece of wax paper gently over the tops of the muffins and freeze for about 20 minutes
- After 20 minutes, remove from freezer, remove wax paper and place muffins on a broiler sheet
- Broil for 10-15 minutes until crispy. Keep an eye on them so they don't burn
- Let cool slightly and cut into ¼-inch pieces
