About Rick Widmayer

At Screen Door restaurant in Portland, Oregon, you'll find creamy grits, jambalaya and pulled pork. Real food for the soul. You'll also find Rick Widmayer. His introduction to the restaurant business started with washing dishes and bussing tables. But after forays into different ventures, Rick realized nothing else held for him the creativity he found in cooking.

Recipe

Ingredients

Serves 6-8 hearty portions

  • 5+ cups water
  • 1½ - 2 cups slow-cooking grits, yellow or white
  • 1 stick of butter (½ cup)
  • salt to taste

How-to

  1. Bring water to a boil
  2. Add butter
  3. Add grits and whisk the mixture steadily until it comes to a boil
  4. Cook for 1-2 hours, continually stirring to avoid sticking to bottom of pan
  5. If grits become too think, simply add more water. When grits are close to serving, stop adding water so they won't be too runny
  6. Add salt to taste
  7. Grits should be creamy and soft with no gritty texture
