Recipe

Ingredients

  • 1½ lbs boneless chicken breast, cut into pieces
  • salt
  • pepper
  • 1 tbsp olive oil
  • ¼ cup white onions, chopped
  • ¼ cup pimento-stuffed olives, halved
  • ¼ cup prunes, chopped
  • 2 tbsp capers, drained
  • ¾ cup chicken broth
  • 1 box of instant couscous, cooked per package directions (optional)

How-to

  1. Take chicken and place between two pieces of plastic wrap and flatten out with a mallet. Sprinkle each side with salt and pepper
  2. In a large skillet heat olive oil over medium heat. Cook chicken about 5 minutes on each side, browning just a little. Transfer to plate, cover with foil to keep warm
  3. To the chicken drippings and oil left in the pan, add onion and cook until softened, stirring occasionally. Add olives, prunes and capers with ¾ cups of chicken broth
  4. Bring to a boil, then simmer for 2 minutes. Add chicken back to pan and simmer for 5 minutes
  5. Serve with couscous or brown rice
