Having a party? This is the ultimate sandwich. Make it 6' long like Johnny from All Star Sandwich Bar or scale the recipe down for a few sandwiches for your lucky guests. The Muffuletta is a classic New Orleans sandwich with cold cuts, provolone cheese and the most delicious vinegar, olive and pepper relish that brings the whole sandwich together. You can also use that olive relish on any sandwich. It's addictive!
Ingredients
Olive Relish (makes enough for sandwich + extra to serve on the side)
- 3 lemons, juiced & zested
- ¼ cup honey
- ½ cup chopped garlic
- 2 tbsp chili flakes
- 2 tbsp ground black pepper
- ¼ cup dried oregano
- 2 red onions, chopped
- 5 red bell peppers, roasted, peeled & chopped
- 5 yellow bell peppers, roasted, peeled & chopped
- 2½ cups banana pepper rings, chopped
- 5 cups green olives w/ pimentos, chopped
- 5 cups pitted kalamata olives, chopped
- 1½ cups capers, chopped
- 1 qt extra virgin olive oil
- 2 cups red wine vinegar
Sandwich
- 6’ loaf scali bread (or bread of choice - usually available through bakery special orders)
- 2 lbs sliced Virginia baked ham
- 1½ lbs sliced provolone
- 1½ lbs sliced Genoa salami
- 1½ lbs sliced sweet capicola
- 1 lb sliced mortadella
How-to
- Combine all olive relish ingredients together in a large bowl and set aside (for best flavor, allow to marinate in refrigerator at least 1 hour)
- Slice bread in half all of the way through. Lay the top half open on your work surface
- Pull some of the bread from the center of the loaf on both the top and the bottom (to make pockets for the olive relish!)
- Spoon on the olive relish generously over both halves, drizzling the oil/vinegar marinade over the bread as well
- Start layering all meats and cheese on bottom half of bread
- With help of a friend, carefully flip the top of bread back atop the mounds of meat and cheese. Slice and serve!
