Ingredients
Meatloaf
- 1 onion, diced
- 3 stalks, celery, diced
- 2 tbsp garlic, minced
- 2 tbsp olive oil
- ¼ cup beef broth
- 1 tbsp salt
- 2 tbsp pepper
- 1 tsp chili flakes
- 1 tsp dried thyme
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tbsp Worcestershire sauce
- ¼ cup ketchup
- 1 cup breadcrumbs
- 2 eggs, beaten
- 1 lb ground beef
- 1 lb sweet Italian sausage
Caramelized Onion Jam
- 2 tbsp olive oil
- 5 red onions, sliced
- ¼ cup chopped garlic
- ¼ cup chopped ginger
- 1 cup apple cider vinegar
- 1 cup dark brown sugar
- 2 tbsp coriander seeds, toasted & ground
- 1 tsp allspice, toasted & ground
- 2 tbsp honey
- salt to taste
- pepper to taste
Inner Beauty Hot Sauce (makes about 3 cups)
- 6 habanero peppers
- ½ cup yellow mustard
- ½ cup orange juice
- ½ cup white vinegar
- 1½ tsp honey
- 1 tbsp molasses
- 2 tbsp pineapple juice
- 2 tbsp papaya juice
- 1 cup canola oil
- 1 tsp cumin
- 1 tsp turmeric
- ½ tsp ground allspice
- 1 tsp curry powder
For the Sandwich
- clarified butter
- 1 slice meatloaf
- Caramelized Onion Jam (see recipe above)
- Monterey Jack cheese
- Inner Beauty Hot Sauce (see recipe above)
- sourdough bread
How-to
Make the Meatloaf
- Preheat oven to 350º
- Sauté the onions, garlic and celery in olive oil on high heat and cook until translucent, 2-3 minutes
- Remove from heat and let cool
- In a large bowl, mix all the cooled onion mixture with all ingredients except for the meats until well-incorporated
- Fold in meat to mixture, being careful not to over-mix
- Grease a loaf pan with butter or nonstick cooking spray and line with parchment paper. Press into pan and cover in aluminum foil
- Roast about 1 hour and 45 minutes to 2 hours, or until the internal temperature reaches 160º (temperature will carry over to 165º)
- Remove from the oven and cool, then slice into 6-7 pieces
Make Caramelized Onion Jam
- Heat 2 tbsp olive oil over medium heat in a large sauté pan
- Add the onions and allow to melt down and caramelize until they are amber in color, 15-20 minutes
- Add the remaining ingredients and simmer for an additional 15 minutes until most of the liquid has evaporated. Remove from heat and set aside
Make the Hot Sauce
- Add all ingredients to a blender and purée until smooth
Assemble Sandwich
- Season a slice of meatloaf with salt and pepper
- Heat clarified butter over medium-high heat. Grill meatloaf 1-2 minutes, flip, and add cheese and Caramelized Onion Jam. Grill 1-2 more minutes or until cheese is melted
- Butter sourdough bread and grill both slices on one side until golden, 1-2
- Place meatloaf on a slice of grilled bread and lace with Inner Beauty Hot Sauce. Top with 2nd slice of bread and serve

Before sandwiching this epic pile of sweet loving between two pieces of grilled sourdough bread, Johnny slathers on habenero-based "Inner Beauty Hot Sauce." Beware: this sandwich is not for the faint of heart (or stomach).
