Baking at High Altitudes

Will Poole, chef/owner of Wen Chocolates in Denver, Colorado, knows a thing or two about baking. He offers us his tips about leavening agents and eggs, what to do and what not to do, to turn out stellar baked goods whether you're up in the Rockies or on K2.

About Will Poole

Chef Will Poole was influenced at an early age by his grandparents. Their baking skills and the unforgettable aromas of home cooking were an inspiration to him. As owner of highly successful Wen Chocolates in Denver, Colorado, and now as chef d'cuisine of Maison de Macarty, a New Orleans guest house, this cowboy, chef, lover of animals and nature, is a true Renaissance man.
