Jeff Fritts sure does know how to cause a stir! Jeff begins by making a sweet and aromatic simple syrup with raspberries and some fresh thyme. He then uses the cooled syrup to infuse flavor into this gin-based wonder cocktail: the Raspberry-Thyme Rickey. Perfectly sweet, crisp and refreshing!
Makes 1 cocktail
Ingredients
For the Simple Syrup
- 1 cup water
- 1 cup sugar
- ½ cup raspberries
- 5-6 sprigs fresh thyme
For the Drink
- 3-4 raspberries, muddled
- ice
- 1 oz lime juice
- ¾ oz raspberry-thyme simple syrup
- 2 oz gin
- top with seltzer or club soda
For the Garnish
- fresh raspberries
- thyme sprig
How-to
Make Simple Syrup
- In a small saucepan over medium-high heat, combine raspberries, thyme, water, and sugar and bring to a boil
- Stir until sugar is completely dissolved
- Set aside to cool, then strain and pour into an airtight container. Store in the refrigerator up to a month
Make Cocktail
- Muddle a few raspberries in the bottom of a glass
- Fill glass about halfway with ice
- Add syrup, lime juice and gin
- Fill the rest of the way with seltzer water
- Garnish with raspberries & thyme
