Recipe

Ingredients

Chicken Nuggets

  • 1 pkg boneless chicken breast, trimmed and cut into ½-1" pieces

Marinade

Combine your favorite mustards or use Jessie's choices:

  • 2-3 tbsp honey mustard
  • 1 tbsp specialty honey mustard
  • 2-3 tbsp grainy mustard
  • salt & pepper to taste
  • ½-1 cup dark beer (flavor of your choice)
  • 1-2 tsp vegetable or canola oil (optional)

Breading

  • ¼ cup breadcrumbs
  • 1/2 cup cornflakes
  • add the following herbs & spices to taste:

- dried oregano

- garlic powder

- dried basil

- freshly ground black pepper

- thyme

- onion powder

- pinch of salt

How-to

Prepare Marinade & Chicken

  1. Combine mustards, salt, pepper and beer in a bowl and mix well
  2. Cut chicken into ½-1" pieces and add to marinade
  3. Refrigerate & marinate 30 min

Prepare Breading

  1. In a shallow bowl add breadcrumbs
  2. Put cornflakes in a sealed plastic bag, crumble, then add to breadcrumbs
  3. Add herbs and spices and mix well

Bread & Bake Chicken

  1. Preheat oven to 350 degrees
  2. Remove chicken from marinade and coat with breading
  3. Place chicken on foil-lined sheet pan
  4. Bake 25-30 min, checking for doneness
  5. Serve with Jessie's Honey Mustard Sauce

    I made them over the weekend again as well - a little tip if you don't have honey mustard on hand. Feel free to add 2 tablespoons of honey, 2 tablespoons of mayo and regular yellow mustard - tastes just as good! (Jan 26, 2009 10:47:16 AM)

    I tried them and these little nuggets are the perfect size for poppin! and the tangy yet sweet honey mustard sauce is the perfect pairing... Also I love your tip about using a large beer for the marinade so if you don't use the whole beer in the recipe, you can indulge on the rest of it while your chicken is cooking. yum!
