Fondue, from the French verb fondre (to melt), is the official Swiss National Dish. French restaurant owner Christian Touche of AKA Bistro makes a traditional Savoyard cheese fondue including three delicious Alpine cheeses, white wine and Kirsch (cherry liqueur). A simple dish it may seem; but don't be fooled. Without listening to Christian's subtle suggestions of "DO NOT BOIL" as well as, "...and again, NO BOILING" — you will end up with a separated mess. Serve with long fondue forks and bread to dip, then fight for the cheesy crust at the bottom of the pot known as the religieuse.
