The sweet potato always seems to make an appearance in dishes laden with syrups, cream and marshmallows. No one is denying how delicious that can be, but sometimes you have to take the road less traveled and embrace this jewel-toned spud for all its natural sweetness. Chef Kirk Conrad does just that in this minimalist recipe for mashed sweet potatoes.
Ingredients
For Sweet Potatoes
- 3½ lbs sweet potatoes, peeled & diced
- salt for boiling water
- 3 tbsp butter or margarine
- 2 tbsp maple syrup
- ¼ tsp cinnamon
- ¼ tsp salt
- ¼ tsp white pepper
Suggested Garnish
- chopped parsley
How-to
- Bring potatoes to boil in a pot of cold, salted water. Cook 12-15 minutes until tender
- Remove from heat and drain completely
- Whisk the potatoes with the rest of the ingredients until smooth
- Garnish with fresh, chopped parsley if desired. Serve warm
