About Arika Beaudry

Born and bred in Juneau, Alaska, Arika has great ties to her homeland and her Dad, who is a commercial salmon fisherman there. So much so that she recently returned home for a month-long adventure on her father's fishing boat to wrangle some wild salmon. Hardest but most rewarding thing she's ever done.

Recipe

Ingredients

  • 1 large sockeye salmon fillet (also known as red salmon – from Prince William Sound, Alaska)
  • olive oil
  • 2 tsp Arika's Special Salmon Rub (see below)

Arika's Special Salmon Rub

  • 4 tbsp brown sugar
  • 3 tbsp smoked paprika
  • 1 tbsp kosher salt
  • 1 tbsp thyme
  • 1 tsp black pepper

How-to

  1. Remove skin from salmon and cut into smaller 4-6" fillets (about 7 oz each)
  2. Coat each fillet with olive oil and 2 tsp Arika's Special Salmon Rub
  3. Heat olive oil in sauté pan over medium-high heat
  4. Cook salmon for approximately 4 minutes on each side
