About Chris Parachini

Chris Parachini makes beautifully inspired pizzas at his pizza shop, Roberta's, in Bushwick, NY, an up and coming neighborhood in Brooklyn. He got the idea to open a pizza shop while enjoying a nice slice with some friends one day. He heard of a wood-burning oven in Italy he could get for a steal and had it shipped over. For Chris and his partners, Mauro Soggiu and Brandon Hoy, the rest, as they say, is history. Thank you, Chris, for sharing your dough, sauce and toppings recipes with us.

Recipe

Ingredients

For a 12" Pie

Margherita Pizza

  • pizza dough ready for dressing (we recommend using Chris' recipe for a crispy chewy crust)
  • 2 oz pizza sauce
  • Mozzarella cheese
  • olive oil

Guanciale & Egg Pizza

  • all of the above Margherita ingredients
  • guanciale (cured pig jowl)
  • egg

How-to

  1. Spread dough out on flat surface
  2. Ladle pizza sauce on middle of pie, then spread around leaving enough room for crust
  3. Apply clumps of mozzarella cheese, but not too much
  4. Add a little olive oil to taste
  5. Preheat oven to highest temperature
  6. (For Guanciale & Egg Pizza) Add guanciale
  7. Bake for 12-15 minutes
  8. (For Guanciale & Egg Pizza) Add egg as you take the pie out of the oven
  9. Slice and serve!
